Owner Umberto Paltrinieri took the reins of the family business in 1985, after the passing of his father Romolo, guiding it through a path of evolution and renewal without ever betraying its original identity. From the historic butcher&#8217;s shop to the broader food-quality project, his story traces a long history made of work, vision and a deep bond with the city.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Paltrinieri Quality Food has very deep roots. When was this business born?<\/strong><br>Our story begins in February 1951, when my father Romolo Paltrinieri opened the business on via Cortevecchia, in <a href=\"https:\/\/www.comune.ferrara.it\/\" data-type=\"link\" data-id=\"https:\/\/www.comune.ferrara.it\/\" target=\"_blank\" rel=\"noopener\">Ferrara<\/a>, in the very same premises where we are still found today. At the start it was a shop deeply tied to traditional commerce, in a context where the relationship with the customer was built above all on trust, direct familiarity and everyday continuity.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>When did the moment come for you to take over the family business?<\/strong><br>For me the handover happened in 1985, after my father passed away. It was an important moment, also because the market was changing rapidly: small <a href=\"https:\/\/www.comune.ferrara.it\/it\/b\/56020\/commercio-esercizi-di-vicinato\" data-type=\"link\" data-id=\"https:\/\/www.comune.ferrara.it\/it\/b\/56020\/commercio-esercizi-di-vicinato\" target=\"_blank\" rel=\"noopener\">neighbourhood shops<\/a> were beginning to face new consumption habits and the growth of large-scale retail. From there began a path of renewal that has always tried to keep the identity of our business intact.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>What were the main stages of this transformation?<\/strong><br>There were several key moments. An important first step came in 1988, with a renovation that allowed us to update the equipment and broaden the offer, transforming the business from an old poultry-and-game shop into a more modern, structured butcher&#8217;s shop. Then in 1998 there was a second renovation, which accompanied a further evolution of the shop and of the trade itself, increasingly focused not only on sales but also on preparing ready-to-cook products.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>In 2016 Paltrinieri Quality Food officially came into being: what does this new phase represent?<\/strong><br>It represented a true repositioning. Almost twenty years after the last restyling, we decided to shape a broader project, one that would go beyond the traditional butcher&#8217;s shop. That&#8217;s how Paltrinieri Quality Food was born, with the goal of offering a more complete food and wine selection, built on high-quality Italian and foreign products, able to stand out from large-scale retail while remaining accessible.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Does meat still remain the heart of your identity?<\/strong><br>Absolutely yes. Meat has always been the first pillar of our business. We select almost exclusively Italian meat from certified farms, with great attention to quality, animal feed and compliance with health regulations. The same approach applies to cured meats, for which we favour small artisan producers, looking for genuine products with few preservatives and strong character.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Today, what really makes the difference for a historic shop like yours?<\/strong><br>I believe the difference is made by product quality and service quality together. For us it&#8217;s essential that the customer finds not just a well-stocked counter, but also expertise, listening and advice. We invest a great deal in staff training and try to guide people in their choices, both for everyday shopping and for more special occasions.
